3-4 lb London broil, thawed to room temperature
1/4 to 1/3 cup olive oil
Kosher sea salt
Freshly ground black pepper
4-6 peeled garlic cloves
-Pre-heat oven to 350
-Arrange oven rack so that meat will be 4 inches from the top of the oven.
-Turn oven to broil setting and set meat on a flat surface.
-Drizzle half of the olive oil over one side of meat, and then rub in.
-Sprinkle each of the following ingredients over the same side, rubbing each one into the meat before adding the next: cayenne pepper, sea salt, then freshly ground black pepper.
-Using garlic press, crush 2 cloves of garlic over the same side, and then rub into the meat.
-Flip London broil over, and add olive oil, cayenne pepper, salt, black pepper, and garlic to the other side using the same method.
-Cook under broiler for approximately 15 minutes, turning meat over only once, halfway through the cooking time.
