Cross- Rib Roast

2-3 lb of Rancho San Julian Cross Rib Roast
2 tbs of balsamic vinegar
2 minced cloves of garlic
2 tsp of dried thyme
1 tsp of dried rosemary
Salt, pepper and splash of olive oil

Brush roast with vinegar
Make a sauce with the rest of ingredients
Roast meat at 450 for 15 mins. The reduce heat to 350 and cook for 40-60 mins or until temperature reads 125.
